My social media until recently consisted of blogging, facebook, pinterest and twitter, and of those blogging  and pinterest went hand in hand with all of the amazing images pinned.  I was initially reluctant to expand into Instagram, but now I love it.  The images are fabulous, the topics diverse and adding an image is so simple and you get your message out instantly – hence the name!

Recent posts have been of an item I found on the side of the road followed by its transformation, a meal from a bar I went to (it seems as if half the world now photographs their food before they eat and I thank Stephen for his patience) a photograph from Vivid and some client images.

A delicious find!

Another country bliss weekend

Friday night we head off in the direction of our country retreat.
Saturday was spent working in the garden.  Waking late on Sunday we
drove towards Murrumburrah in search of somewhere to have brunch.

We came across Barnes Store Emporium and Cafe
@ 346 Albury Street, Murrumburrah ,  a twin town with Harden
(35km south-east of Young)

And how happy were we!

Locally sourced produce & friendly and helpful staff make this a welcome addition to the area
They make their own tomato relish – delicious!

Not only do they serve delicious tea but  you also select your own cup and tea pot
Such a nice touch

This recipes serves 4 – 6 & is low GL/GI, Cholesterol Busting,
Antioxidant Packed, Omega Rich & High in Fibre

You will need:

2 medium sweet potatoes, peeled & cubed
100g quinoa
vegetable stock
finely chopped parsley
black pepper
4 tbsp olive oil
1 small onion chopped
2 cloves glalic, chopped
1 carrot, finely chopped
Half a red pepper, chopped
2 tsp paprika
sprinkle of cumin

Method:

Drizzle olive oil over the sweet potato & place in a pre-heated oven on
medium for 15 minutes

Meanwhile, heat the olive oil in a frying pan
Fry the onion gently until softened, around 5 minutes

Add the garlic, carrot & red pepper
Fry gently for 5 minutes
Remove from heat, season with salt & pepper, paprika & cumin

Add the stock (enough to cover all ingredients) & quinoa to a large pan bring to boil and then simmer

Add the onion/vegetable mixture & part-roasted sweet potato to the simmering stock
Add a little more stock if required
Ensure all vegetables are covered

Simmer the soup for 20 minutes until all ingredients are soft
Blend or leave chunky
